    Meal of the Month: Ambrosia Breakfast Pudding

    Ambrosia apples are my favourite variety; besides the sweet, honeyed flavour, Ambrosia apples are slow to oxidize, which means that when they’re sliced, they don’t turn brown as quickly as other apples. They’re also absolutely fat free; full of pectic, a cholesterol-lowering soluble fibre that aids digestion and may help reduce the risk of cancer and heart disease; and, contain a wealth of other trace minerals and vitamins.

    – 3 apples, cubed, skin on
    – 1/2 cup water
    – 2 tbsp ground chia seeds
    – 2 tbsp hemp seeds
    – 1 tbsp ginger, minced
    – 2 tsp cinnamon
    – 1 tsp maca
    – 1 tsp honey (optional)

    Bring cubed apples and water to a boil in a medium saucepan, then cover and reduce heat to a simmer for 10 minutes. Remove from heat and add the remaining ingredients.

    Makes 2 servings.
